A major cause of food spoilage is oxygen. As such,
Modified Atmosphere Packaging (MAP), which tightly controls the amount of
oxygen present in a package, is becoming an ever increasingly popular method
for packaging fresh foods. A major drawback of MAP is the lack of a low cost
and easy to implement oxygen sensor that monitors the integrity of the package
and indicates any presence of oxygen in the package that is outside of the
allowed amount. O2Sense is the first such low cost indicator that can be
